All things being the same here.

Assume 2 identical cars, same weight, same traction, same conditions, same driver

Which car would post a better ET on the track.

The red/green car, or the blue/purple car ?

The red/green car has a little more under the curve mostly torque so it could potentially launch a bit better, but the blue/purple one has more peak HP and carries the power another 500 rpm before falling off.

IMHO the blue purple car would have the edge. All the power on the bottom is going to do for you is burn up tyres. Better to have more power after you get moving IMHO.

I dunno... I like my stupid amounts of bottom-end torque - but only when I have my drag wheels mounted.

In this particular comparison, I would say the purple torque band would be faster, realistically, you spend the bulk of your time in a drag race at 5500+rpm, at 5500 the purple one has roughly 15-20 more lb-ft and it only gets worse from there.

Now for a car that is a DD, from 2000-4000 rpm you're giving up around 15-20 lb-ft, but you do still have 400+ lb ft, seems adequate to me.

What's the curve look like on the one you picked?

About the same, it just keeps going up another 40 horsepower before it drops off about 6800 or so..
